Alton Browns Mac-N-Cheese Recipe Put to the Test.

Start this Mac-N-Cheese recipe by cooking the elbow macaroni. Don’t forget to add salt to the water.
Once the water begins to boil add the elbow macaroni. (Note we doubled the recipe so we used a full pound of noodles)
Stir the noodles to make sure that they don’t stick together. Follow instructions on the package. Ours took 6 minuets to cook. While your noodles are cooking start your sauce.
Add eggs to your bowl.
Add evaporated milk to your bowl. Sierra used 5 oz cans. 5 oz. was less than what the recipe called for. The meal turned out fine. Note: adding less milk would cause the Mac-N-Cheese to be thicker. On the flip side adding more milk would cause the Mac-N-Cheese to become thiner. (Sierra added two cans because we doubled the recipe).
Add fresh pepper. Sierra turned it 12 times. Use your best judgment.

For the Hot sauce we chose Tapatio. I like the flavor and it is not too spicy. It is also very inexpensive you can typically find it in the Mexican foods isle. We used about 12 drops or so. I could not tell it was in the final product. If you want a bit more flavor the Tabasco Chipotle sauce could be a good choice.
Add ground mustard. (1.5 tsp if you doubled the recipe)
Whisk the sauce until smooth. The noodles should be ready by now have a parent drain the noodles do not run water over the noodles just drain them and put them back in the pan. Turn heat down to Medium low.
Add butter to the noodles.
Stir the butter into the noodles make sure to coat the noodles with the butter.
Add the sauce to the Mac-n-Cheese.
Add the cheese to the pot. Whew! Maybe this meal should be served along side a salad.

Remember to hold the pan handle while stirring in the Cheese. As the cheese melts it will become easier to stir don’t force it in the beginning because you will break the noodles.
It turns out creamy and tasty. Serve immediately.
I barely got this picture before sierra dug in. It feels rewarding choosing meals that your kids are truly excited about. Next time you are about to go to the grocery store ask your kids what they want for dinner. Then ask them if they would like to help make it. It could turn out to be a lot of fun.

As for the test I would say Alton Browns recipe passed with flying colors. Everyone seemed happy with the results. I suggest sprinkling a little bit of Kosher Salt and adding a few drops of Tapatio hot sauce to the bowl when serving it.
